GLUTEN-FREE PANCAKES
(approximately 6)

Ingredients:

✅ 50 g Universal Mix Incola
✅ 1 spoon of sugar
✅ 1 spoon of vegetable oil
✅ 1 egg
✅ 120 ml of milk

Preparation:

Put all ingredients in a bowl and stir them using a cooking whisk for 1 minute until smooth. Use a well-heated pan with a thin bottom to fry the pancakes. When the bottom of the pancake is blushed, turn it over.

GLUTEN-FREE FRITTERS
(approximately 6)

Ingredients:

✅ 50 g Universal Mix Incola
✅ 1 spoon of sugar
✅ 1 spoon of vegetable oil
✅ ½ teaspoon of baking powder
✅ 1 egg
✅ 120 ml kefir or natural yogurt

Preparation:

Put all ingredients in a bowl and mix them until their consistency is uniform (no lumps).
ALTERNATIVELY: Towards the end, you may add to the dough some chopped apple or blueberries. Mix it up. Use a hot pan to fry fritters on both sides until they become golden brown.

GLUTEN-FREE DUMPLINGS
(1 serving size)

Ingredients:

✅ 100 g Universal Mix Incola
✅ 2 spoons of vegetable oil
✅ 1 egg
✅ 25-30 ml of warm water

Preparation:

  1. Put all ingredients in a bowl and mix them with a spoon, using rapid movements until smooth. Do not knead the dough!
  2. When mixed, spread the dough on the dough board, roll it and cut out circles (using a glass etc.). Put your favourite stuffing in the middle of each circle, fold it in half, then stick the edges firmly with your fingers.
  3.  Add your dumplings to boiling, salted water and boil them for about 5 minutes from the moment they emerge on the surface. The cooking time will dependent on the thickness of the dough.

GLUTEN-FREE GNOCCHI
(1 serving size)

Ingredients:

✅ 100 g Universal Mix Incola
✅ 100 g of white cheese
✅ 1 egg

Preparation:

Add crumbled, white cheese to the mixture and whisk an egg in. Mix it all up to a uniform mass. Then spread the mixture on the dough board and roll it. Cut out pieces some 1.5-2 cm wide. Add dumplings to salted, boiling water. Cook for 7 to 8 minutes.

GLUTEN-FREE MUFFINS
(6 muffins)

Ingredients:

✅ 100 g Universal Mix Incola
✅ ½ teaspoon of baking powder
✅ 2 g of aroma (any flavour)
✅ 50 g of sugar
✅ 2 eggs
✅ 100 g of vegetable oil

Preparation:

Whisk eggs with sugar using a blender. Then add oil as well as loose ingredients. Mix the resulting mixture for about 1 minute until smooth. Put the dough into curl cups and bake for 20 to 25 minutes at 180°C.

GLUTEN-FREE MARBLE CAKE

Ingredients:

✅ 100 g Universal Mix Incola
✅ ½ teaspoon of baking powder
✅ 2 g of aroma (any flavour)
✅ 60 g of sugar
✅ 2 teaspoon of cocoa powder
✅ 2 eggs
✅ 100 g of vegetable oil

Preparation:

  1. Whisk eggs with sugar using a blender, then add oil, aroma and other dry ingredients. Mix the dough for about 1 minute until smooth.
  2. Put 2/3 of the resulting, light dough in the cake mould (cake pan). Add cocoa to the remaining 1/3 of the dough and mix. Pour the resulting cocoa dough on top of the light dough and use a fork to mix with gentle movements (do not mix thoroughly! Mix only until visible light-dark streaks appear). Bake for 35 minutes at 180 °C.

GLUTEN-FREE EGG PASTA
(2 serving size)

Ingredients:

✅ 110 g Universal Mix Incola
✅ 2 spoons of vegetable oil
✅ 1 „M” size egg
✅ 15 g of water

Preparation:

  1. Put the universal mix in a bowl, add an egg, water and oil. Mix all ingredients using a spoon.
  2. Place the dough on the dough board sprinkled with rice flour and knead it till it becomes smooth and elastic. Roll the dough into thin cakes and leave for about 10 minutes. Then cut into narrow strips and put in boiling, salted water. Cook for 5 to 6 minutes.

GLUTEN-FREE EGGLESS PASTA
(2 serving size)

Ingredients:

✅ 100 g Universal Mix Incola
✅ 2 spoons of vegetable oil
✅ 50 g of water

Preparation:

  1. Put the universal mix in a bowl, add water and oil. Mix all ingredients using a spoon.
  2. Place the dough on the dough board sprinkled with rice flour and knead it till it becomes smooth and elastic. Roll the dough into thin cakes and leave for about 10 minutes. Then cut into narrow strips and put in boiling, salted water. Cook for 5 to 6 minutes.

GLUTEN-FREE PUFFS
(15-20 puffs)

Ingredients:

✅ 120 g Universal Mix Incola
✅ 200 g of water
✅ 100 g of margarine or butter
✅ 4 „M” size eggs

Preparation:

  1. Boil water with margarine or butter over low heat. Once the fat is dissolved, add the universal mix to it and mix using a mixer at high speed (keeping the pot on fire at all times) until its consistency becomes smooth. Put the dough aside and wait till it reaches room temperature.
  2. Add one egg at a time to the cooled dough, stirring continuously until its consistency becomes smooth. Put the resulting paste in a confectionery bag. Press round portions of dough into a baking tray lined with baking paper, maintaining large spacing. Bake for 25 minutes at 200°C (with thermo-circulation).

GLUTEN-FREE SPONGE CAKE
(cake tin or 36x24cm tray)

Ingredients:

✅ 140 g Universal Mix Incola
✅ 160 g of sugar
✅ 4 „M” size eggs
✅ 1 teaspoon of baking powder

Preparation:

  1. Separate egg whites from egg yolks. Whisk egg whites into a stiff foam, then add sugar. After combining the ingredients, add one yolk at a time. Whisk everything together for about 1 minute.
  2. Sift the universal mix and baking powder through a sieve and gently pour it into the dough, then mix using a spoon.
  3. Put the resulting paste in a baking tray lined with baking paper or greased. Bake for about 25 minutes at 170 °C (no thermo-circulation).

GLUTEN-FREE MINI DOUGHNUTS
(9 doughnuts)

Ingredients:

✅ 140 g of milk
✅ 1 „M” size egg
✅ 2 spoons of vegetable oil
✅ 15 g of fresh yeast
✅ 210 g Universal Mix Incola
✅ 2 spoons of sugar
✅ 1/2 teaspoon of salt

Preparation:

  1. Leaven: Put 140 g of warm milk, 2 tablespoons of sugar, 15 g of yeast and 15 g of universal mix in a pot. Stir and leave to rise for 15 minutes in a warm place.
  2. Pour the prepared leaven into the remaining mix and add an egg. Stir using a spoon. Then add oil and knead the dough by hand. Leave the dough for 3 to 4 minutes.
  3. Sprinkle rice flour on the dough board and place the dough on the board using a spoon. Grease your hands with oil and form the shape the dough into doughnuts. Cover the doughnuts with a cloth and leave them for about 30 minutes. Throw the doughnuts into the oil heated up to about 180 °C. Fry them for about 2 minutes on each side. When fried, put them on a paper towel. When cooled, stuff the doughnuts with your favourite marmalade or jam.

GLUTEN-FREE STEAMED DUMPLINGS
(4 steamed dumplings)

Ingredients:

✅ 140 g of milk or water
✅ 1 „M” size egg
✅ 2 spoons of vegetable oil
✅ 15 g of fresh yeast
✅ 210 g Universal Mix Incola
✅ 2 spoons of sugar
✅ 1/2 teaspoon of salt

Preparation:

  1. Leaven: Put 140 g of warm milk, 2 tablespoons of sugar, 15 g of yeast and 15 g of universal mix in a pot. Stir and leave to rise for 15 minutes in a warm place.
  2. Pour the prepared leaven into the remaining mix and add an egg. Mix it up. Then add oil and knead the dough by hand for about 2 minutes. Leave the dough for 3 to 4 minutes.
  3. Put the dough on the dough board sprinkled with rice flour. Then form noodles with greased hands. Cover the noodles with a cloth and leave them for about 25 minutes. Boil a small amount of salted water, put a strainer into the pot and place the noodles on the strainer. Cover the lid tightly and cook for 8 minutes without lifting the lid in between.

GLUTEN-FREE PIZZA

Ingredients:

✅ 170 g Universal Mix Incola
✅ 1 spoon of sugar
✅ 1/2 teaspoon of salt
✅ 10 g of fresh yeast
✅ 3 spoons of vegetable oil or olive oil
✅ 100 g of warm water

Preparation:

  1. Leaven: Put yeasts, lukewarm water, sugar and about 20 g of mix in a pot. Stir and leave to rise for 10-15 minutes.
  2. The rest of the universal mix together with the addition of salt pour into the bowl. Add the leaven when risen. Stir using a spoon. Add oil and then knead the dough by hand.
  3. Put the dough on the dough board and form a round bottom of your pizza with your fingers or rolling pin. Leave it to rise for about 30 minutes. Put your favourite ingredients on top and spread olive oil on the edges. Bake for 5 minutes at 250°C.

GLUTEN-FREE WAFFERS

Ingredients:

✅ 50 g Universal Mix Incola
✅ 3-4 spoons of sugar
✅ 1 egg
✅ 2 spoons of vegetable oil
✅ 110 g of milk
✅ ½ teaspoon of baking powder

Preparation:

Put the universal mix in a bowl, add sugar and baking powder. Mix dry ingredients. Then add milk, egg and oil. Blend or mix into a smooth mass. Bake waffles in a heated waffle iron for about 4 minutes.
