New Year’s Eve and Carnival is a time for fun, but for those on a gluten-free diet, it’s also a challenge. Take our hints and prepare gluten-free delicacies for you and your guests.

Pasta and colour salad
The salad is simple, quick and delicious. It will work well for a New Year’s Eve house party.
INGREDIENTS:
- 2 cooked medium-sized beetroots
- package of matjas herring in vinegar marinade (220 g)
- tinned sweetcorn
canned grilled peppers - 4 hard boiled eggs
- white onion
- packet of Incola fusilli tricolore pasta
- parsley
SAUCE:
- 4 tbsp mayonnaise
- 3 tablespoons Greek yoghurt
- 2 tablespoons mustard
- pepper
Place the ingredients for the dressing in a bowl and mix thoroughly. Add pepper as desired, if you prefer spicier salads add a little more. You can also leave it out if you prefer milder flavours.
Boil the beetroot in water or roast it in the oven. Once cooled, finely dice the beetroot and place on the bottom of the salad bowl. Then cover them with sliced herrings, cooked pasta, corn, diced peppers, eggs and onions.
Spread each layer with the prepared sauce.
Sprinkle chopped parsley on top of the salad.

Colourful sandwiches
They are impressive, easy to prepare and perfect for a house party. The closest you can organise is for New Year’s Eve and also during the upcoming carnival.
INGREDIENTS:
- 3 ripe avocados
- juice of 1 lime
- 1 tomato
- parsley*
- red onion
- ½ teaspoon salt
- pinch of pepper
- Incola fresh bread
Cut the avocado in half, scoop out the flesh with a spoon. Place it in a bowl together with salt, pepper and a squeeze of lime juice. Mash thoroughly with a fork.
Carefully wash and dice the tomato, preferably a fleshy one. Finely dice the onion. Add the vegetables to the avocado paste and mix thoroughly.
Finely chop the parsley. Sprinkle the guacamole over the top. Cut the bread into any desired shape and spread the slices with the paste. Add your favourite toppings, such as tinned cucumbers, olives, ham – or skip this step.
