Pasta with asparagus, spinach and bacon – Incola

Excellent pasta typical of Italian cuisine, originating from the south of Italy. It is served with e.g. seafood, pesto or another sauce of choice.

for this recipe, we recommend::

INGREDIENTS:

1 big onion
about 10–15 asparagus spears
70 g finely chopped raw bacon
3 handfuls of spinach
120 ml cream
3 tbsp finely grated pecorino cheese
2 tbsp olive oil
salt, pepper

PREPARATION:

Heat the olive oil on the frying pan, add diced onion and bacon. In the meantime, boil some water for the pasta.

When the bacon is browned, add sliced asparagus, fry. Add half a ladle of pasta water, mix and cover. After 5 minutes, add cream and combine. Season to taste with salt and pepper. Add grated cheese and spinach. Cover again.

Serve with the cooked pasta. You can also pour the cooked pasta into the remaining ingredients and mix on the frying pan.
